green chips

I bought a whole bag of fresh kale without remembering I will be gone for the next week to Hawaii so now I'm in a scramble to finish as much as I can. But the thought of eating kale for breakfast, lunch, and dinner is too boring and unpleasant. So what better way to get rid of half the bag in 10 minutes for one meal? Kale chips. It's so easy, takes no time, and is a healthy, delicious, and actually addicting snack.  For any one who can't say no to the crunch, this is a perfect substitute to potato chips with more flavor and many more nutrients.

Preheat the oven to 350°. Cut the kale with stem into pieces about 1.5-2" long. Rip the leaves off the stem but don't make the leaves any smaller as it will shrink as it bakes. Mix the kale in olive oil and sea salt and any other seasonings as you wish, but with these simple two ingredients, it already tastes amazing since the kale has a strong flavor in itself. Align baking pan with baking sheet (foil is fine as well) and place the kale in a single layer. Bake for 10 minutes or until the edges are slightly brown (give it 9-11 minutes but I wouldn't go longer).
